Chef's Note
For extra flavor without adding complexity, you can warm your tortillas for 10 seconds in the microwave before assembling - this makes them more pliable and less likely to crack. If you're in a hurry, you can cook the quesadilla at slightly higher heat, just watch carefully to prevent burning.

2 each large flour tortillas
6 oz deli ham, thinly sliced
1 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
2 each green onions
1 tbsp butter
1/4 cup salsa
2 tbsp sour cream
1/3 cup black beans, rinsed and drained

Thinly slice 2 green onions and set aside.

Lay 1 flour tortilla on a clean work surface. Spread 3/4 cup of cheddar cheese and 1/4 cup of monterey jack cheese evenly over the entire tortilla.

Layer 6 oz of ham slices evenly over half of the tortilla.

Sprinkle 1/3 cup of black beans and the sliced green onions over the ham.

Sprinkle the remaining 1/4 cup cheddar and 1/4 cup monterey jack cheese over the beans and ham.

Fold the empty half of the tortilla over the filled half to create a half-moon shape.

Heat a large skillet over medium heat and add 1 tbsp of butter.

Once butter is melted, carefully transfer the quesadilla to the skillet and cook for 3-4 minutes until golden brown on the bottom.

Carefully flip the quesadilla and cook for another 3-4 minutes until the second side is golden brown and the cheese is completely melted.

Transfer to a cutting board and let rest for 1 minute before cutting into 4 wedges.

Serve with 1/4 cup salsa and 2 tbsp sour cream on the side.
