Chef's Note
For extra crispy quesadillas, use a cast iron skillet if you have one. If you're in a hurry, you can microwave the quesadilla for 30 seconds before pan-frying to speed up the cheese melting process.

2 each large flour tortillas
6 oz deli ham, thinly sliced
1/2 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
2 each green onions
1/4 cup red bell pepper
1/4 cup black beans, rinsed and drained
1 spray cooking spray
2 tbsp salsa
1 tbsp sour cream
Instructions

Thinly slice 2 green onions and dice 1/4 cup of red bell pepper.

Lay one tortilla flat on a clean surface. Spread 1/2 cup of shredded cheddar cheese and 1/2 cup of monterey jack cheese evenly over the entire tortilla.

Arrange 6 oz of ham slices evenly over half of the tortilla.

Sprinkle 1/4 cup of black beans, the sliced green onions, and diced red bell pepper over the ham.

Fold the tortilla in half, pressing gently to seal.

Heat a large non-stick skillet over medium heat and spray with cooking spray.

Place the quesadilla in the skillet and cook for 2-3 minutes until golden brown on the bottom.

Carefully flip the quesadilla and cook for another 2-3 minutes until the cheese is fully melted and the second side is golden brown.

Remove from heat and let cool for 1 minute before cutting into triangles.

Serve with 2 tbsp of salsa and 1 tbsp of sour cream on the side.
