Chef's Note
For extra flavor without adding complexity, try brushing the outside of the tortillas with a little butter before cooking. This creates an even more golden, crispy exterior. You can also prepare multiple quesadillas at once and keep them warm in a 200°F oven while you finish the batch.

2 each large flour tortillas
6 oz deli ham, thinly sliced
1 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
2 each green onions
1 tbsp butter
1/4 cup salsa
2 tbsp sour cream
Instructions

Thinly slice 2 green onions and set aside.

Place one tortilla on a clean work surface. Evenly arrange 6 oz of ham slices over half of the tortilla.

Sprinkle 1 cup of shredded cheddar cheese and 1/2 cup of monterey jack cheese over the ham.

Scatter the sliced green onions over the cheese.

Fold the empty half of the tortilla over the filling to create a half-moon shape.

Heat a large skillet over medium heat and add 1 tbsp of butter.

Once butter is melted, carefully transfer the quesadilla to the skillet.

Cook for 3-4 minutes until the bottom is golden brown and crispy.

Carefully flip the quesadilla and cook for another 2-3 minutes until the other side is golden and the cheese is completely melted.

Transfer to a cutting board and let rest for 1 minute before cutting into wedges.

Serve with 1/4 cup salsa and 2 tbsp sour cream on the side.
