2 each large flour tortillas
6 oz deli ham, thinly sliced
1/2 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
2 each green onions
1/4 cup red bell pepper
1 spray cooking spray
1/4 cup salsa
1/4 cup Greek yogurt
Instructions

Thinly slice 2 green onions and dice 1/4 cup of red bell pepper.

Place one flour tortilla on a clean work surface.

Sprinkle 1/4 cup of cheddar cheese and 1/4 cup of monterey jack cheese evenly over the entire tortilla.

Arrange 6 oz of ham slices evenly over half of the tortilla.

Sprinkle the sliced green onions and diced red bell pepper over the ham.

Sprinkle the remaining 1/4 cup of cheddar and 1/4 cup of monterey jack cheese over the vegetables.

Fold the tortilla in half to create a half-moon shape.

Heat a large non-stick skillet over medium heat and spray with cooking spray.

Carefully transfer the quesadilla to the skillet and cook for 3-4 minutes until golden brown on the bottom.

Flip the quesadilla using a spatula and cook for another 3-4 minutes until the second side is golden brown and the cheese is completely melted.
