Chef's Note
For a make-ahead option, prepare the turkey mixture the night before and store in the refrigerator. In the morning, simply reheat the filling and assemble your wrap for a quick lunch. You can also wrap it in foil to keep it warm if you're taking it to go.

6 oz lean ground turkey
1 tsp taco seasoning
1 large (10-inch) whole wheat tortilla
1/4 cup black beans
1/2 cup shredded lettuce
1/4 cup diced tomato
2 tbsp diced red onion
1/4 cup reduced-fat shredded cheddar cheese
2 tbsp plain Greek yogurt
1 tsp olive oil
1/2 small lime
1/4 tsp salt
1/8 tsp black pepper

Heat a non-stick skillet over medium heat and add 1 tsp of olive oil.

Add 6 oz of lean ground turkey to the skillet and break it up with a wooden spoon. Cook for about 5 minutes until no longer pink.

Sprinkle 1 tsp of taco seasoning, 1/4 tsp of salt, and 1/8 tsp of black pepper over the turkey. Stir to combine and cook for another 2 minutes.

Drain and rinse 1/4 cup of black beans, then add them to the turkey mixture. Cook for 1 minute to warm through, then remove from heat.

Warm the large whole wheat tortilla in the microwave for 10-15 seconds to make it more pliable.

Spread 2 tbsp of plain Greek yogurt on the tortilla, leaving a 1-inch border around the edges.

Spoon the turkey and black bean mixture onto the center of the tortilla.

Top with 1/4 cup of shredded cheddar cheese, 1/2 cup of shredded lettuce, 1/4 cup of diced tomato, and 2 tbsp of diced red onion.

Squeeze juice from 1/2 small lime over the fillings.

Fold in the sides of the tortilla, then roll it up tightly from the bottom, tucking in the sides as you roll.

If desired, return the wrap to the skillet and toast seam-side down for 1-2 minutes to seal it closed.
