For the best flavor, toast the nuts and seeds until they're just golden - they'll continue cooking slightly after you remove them from the oven. If you prefer a sweeter mix, you can add a touch more honey, but this will increase the carb content. This trail mix stores well for up to a week in an airtight container.

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a medium bowl, combine 1/4 cup almonds, 1/4 cup walnuts, 2 tablespoons pumpkin seeds, and 2 tablespoons sunflower seeds.

Drizzle 1 teaspoon honey over the nut and seed mixture.

Sprinkle 1/4 teaspoon cinnamon and 1/8 teaspoon salt over the mixture and toss until everything is evenly coated.

Spread the mixture in a single layer on the prepared baking sheet.

Bake for 12-15 minutes, stirring once halfway through, until the nuts are lightly toasted and fragrant. Watch carefully to prevent burning.
