For extra flavor, you can grill the chicken instead of pan-frying. If you're in a hurry, you can use pre-cooked rotisserie chicken - just warm it up briefly before assembling the sandwich. The apple provides a refreshing sweet balance to the savory sandwich.

6 oz boneless skinless chicken breast
1/4 tsp salt
1/4 tsp black pepper
1 tsp olive oil
2 slices whole grain bread
2 tbsp prepared pesto sauce
1 cup fresh spinach leaves
1/2 medium tomato
2 thin slices red onion
1 oz mozzarella cheese
1 medium apple
Instructions

Season 6 oz chicken breast with 1/4 tsp salt and 1/4 tsp black pepper on both sides.

Heat 1 tsp olive oil in a non-stick pan over medium heat.

Cook the chicken breast for 6-7 minutes per side until internal temperature reaches 165°F (74°C).

Remove chicken from pan and let rest for 5 minutes, then slice thinly.

Toast 2 slices of whole grain bread until lightly browned.

Spread 1 tbsp of pesto sauce on each slice of bread.

Layer 1 cup of spinach leaves on one slice of bread.

Add the sliced chicken on top of the spinach.
