Chef's Note
For extra flavor without adding complexity, you can quickly grill the bread with a bit of olive oil before assembling the sandwich. If you're meal prepping, keep the chicken separate and assemble the sandwich fresh to prevent sogginess.

6 oz boneless skinless chicken breast
1/4 tsp salt
1/4 tsp black pepper
1 tsp olive oil
2 slices whole grain bread
2 tbsp prepared pesto sauce
1/2 cup baby spinach
1/2 medium tomato
1 oz mozzarella cheese, part-skim
1/4 cup red bell pepper
1 medium apple

Season 6 oz of chicken breast with 1/4 tsp salt and 1/4 tsp black pepper on both sides.

Heat 1 tsp olive oil in a non-stick pan over medium heat.

Cook the chicken breast for 5-7 minutes on each side until the internal temperature reaches 165°F (74°C).

While the chicken cooks, slice 1/2 medium tomato and 1/4 cup red bell pepper.

Toast 2 slices of whole grain bread until lightly browned.

Once the chicken is cooked, let it rest for 2 minutes, then slice it into thin strips.

Spread 1 tbsp of pesto sauce on each slice of bread.

Layer 1/2 cup baby spinach, sliced chicken, 1/2 sliced tomato, 1/4 cup sliced red bell pepper, and 1 oz mozzarella cheese on one slice of bread.
