5 oz canned tuna in water, drained
1 tablespoon light mayonnaise
1 tablespoon plain Greek yogurt
1 teaspoon lemon juice
1 teaspoon dijon mustard
2 tablespoons red onion, finely diced
1 tablespoon fresh parsley, chopped
1/4 teaspoon black pepper
2 slices whole grain bread
2 slices reduced-fat cheddar cheese
1/2 medium tomato, sliced
1 spray cooking spray
1 medium apple

In a medium bowl, combine 5 oz drained tuna, 1 tablespoon light mayonnaise, 1 tablespoon Greek yogurt, 1 teaspoon lemon juice, and 1 teaspoon dijon mustard. Mix well.

Add 2 tablespoons diced red onion, 1 tablespoon chopped parsley, and 1/4 teaspoon black pepper to the tuna mixture. Stir to combine.

Lay out 2 slices of whole grain bread and spread the tuna mixture evenly on one slice.

Place 1/2 medium sliced tomato on top of the tuna mixture, then layer with 2 slices of reduced-fat cheddar cheese.

Heat a non-stick skillet over medium heat and lightly coat with cooking spray.
