5 oz canned tuna in water, drained
1 tablespoon light mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
2 tablespoons red onion, finely diced
2 slices whole grain bread
2 slices reduced-fat cheddar cheese
1/2 medium tomato, sliced
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1 spray cooking spray
1 medium apple

In a bowl, combine 5 oz drained tuna, 1 tablespoon light mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon lemon juice, 2 tablespoons diced red onion, 1/4 teaspoon black pepper, and 1/4 teaspoon dried oregano. Mix well until combined.

Lay out 2 slices of whole grain bread and place 1 slice of reduced-fat cheddar cheese on each slice.

Spread the tuna mixture evenly on one slice of bread over the cheese.

Top with sliced tomato and then place the other slice of bread on top, cheese side down.

Heat a non-stick skillet over medium heat and spray with cooking spray.

Place the sandwich in the skillet and cook for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
