Chef's Note
For extra zest, add a pinch of lemon zest to the tuna mixture. If you prefer a crispier sandwich, lightly butter the outside of the bread before grilling instead of using cooking spray.

2 slices whole grain bread
5 oz canned tuna in water, drained
1 tablespoon light mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
2 tablespoons red onion
2 slices reduced-fat cheddar cheese
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1 spray cooking spray
1 medium apple

In a bowl, combine 5 oz drained tuna, 1 tablespoon light mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon lemon juice, 2 tablespoons finely chopped red onion, 1/4 teaspoon black pepper, and 1/4 teaspoon dried oregano. Mix well until combined.

Lay out 2 slices of whole grain bread on a clean surface. Spread the tuna mixture evenly on one slice of bread.

Place 2 slices of reduced-fat cheddar cheese on top of the tuna mixture, then cover with the second slice of bread.

Heat a non-stick skillet over medium heat and lightly coat with cooking spray.

Place the sandwich in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Remove from heat, cut in half diagonally, and serve with 1 medium apple on the side.
