Chef's Note
For extra zesty flavor, add a pinch of lemon zest to the tuna mixture. If you prefer a crispier sandwich, you can toast the bread lightly before adding the tuna mixture.

5 oz canned tuna in water, drained
1 tbsp light mayonnaise
1 tbsp plain Greek yogurt
1 tsp lemon juice
1 tsp Dijon mustard
2 tbsp red onion, finely diced
1 tbsp fresh parsley, chopped
1/4 tsp black pepper
2 slices whole grain bread
2 oz reduced-fat cheddar cheese
1/2 medium tomato, sliced
1/2 cup baby spinach
1 spray cooking spray
1 medium apple

In a medium bowl, combine 5 oz drained tuna, 1 tbsp mayonnaise, 1 tbsp Greek yogurt, 1 tsp lemon juice, and 1 tsp Dijon mustard. Mix well.

Add 2 tbsp diced red onion, 1 tbsp chopped parsley, and 1/4 tsp black pepper to the tuna mixture. Stir to combine.

Lay out 2 slices of whole grain bread and divide the tuna mixture evenly between them, spreading to the edges.

Top each slice with 1 oz of reduced-fat cheddar cheese, tomato slices, and baby spinach.

Heat a non-stick skillet over medium heat and spray with cooking spray.

Place the open-faced sandwiches in the skillet (you may need to do one at a time) and cover with a lid. Cook for about 3-4 minutes until the cheese begins to melt.

Carefully fold the sandwiches closed, press lightly with a spatula, and cook for another 2-3 minutes on each side until golden brown and cheese is fully melted.

Remove from heat, cut in half, and serve with 1 medium apple on the side.
