Chef's Note
For extra tender meatballs, avoid overmixing the meat mixture. Just combine until ingredients are incorporated. You can also make these meatballs ahead of time and refrigerate them for up to 24 hours before cooking for even quicker meal prep.

8 oz ground turkey
1/4 cup breadcrumbs
1 large egg
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
3/4 cup brown rice
1 1/2 cups water
1/3 cup marinara sauce
1 cup baby spinach
2 tbsp grated parmesan cheese

In a medium pot, bring 1 1/2 cups of water to a boil. Add 3/4 cup brown rice, reduce heat to low, cover and simmer for 20 minutes until water is absorbed and rice is tender.

While rice cooks, in a medium bowl, combine 8 oz ground turkey, 1/4 cup breadcrumbs, 1 large egg, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp dried oregano, 1/4 tsp salt, and 1/4 tsp black pepper. Mix gently until just combined.

Form the turkey mixture into 8-10 meatballs, about 1 1/2 inches in diameter.

Heat 1 tbsp olive oil in a large non-stick skillet over medium heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through (internal temperature of 165°F).

Add 1/3 cup marinara sauce to the skillet with the meatballs. Reduce heat to low and simmer for 2 minutes until sauce is warm.

Add 1 cup baby spinach to the skillet and stir until just wilted, about 1 minute.

Place the cooked brown rice in a bowl, top with the meatballs, sauce, and spinach mixture.

Sprinkle 2 tbsp grated parmesan cheese over the top and serve immediately.
