Chef's Note
For extra flavor, you can add 1 tablespoon of grated parmesan directly into the meatball mixture. These meatballs also freeze well, so consider making a double batch and freezing half for another quick meal!

8 oz ground turkey
1/4 cup breadcrumbs
1 large egg
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
3/4 cup brown rice
1 1/2 cups water
1 cup broccoli florets
1/4 cup marinara sauce
2 tbsp grated parmesan cheese

Bring 1 1/2 cups of water to a boil in a small pot. Add 3/4 cup brown rice, reduce heat to low, cover, and simmer for 15-20 minutes until tender.

While rice cooks, in a medium bowl, combine 8 oz ground turkey, 1/4 cup breadcrumbs, 1 large egg, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried oregano, 1/4 tsp salt, and 1/4 tsp black pepper. Mix gently until just combined.

Form the turkey mixture into 8-10 meatballs, about 1 1/2 inches in diameter.

Heat 1 tbsp olive oil in a large non-stick skillet over medium heat. Add the meatballs and cook for 8-10 minutes, turning occasionally until browned on all sides and cooked through (internal temperature of 165°F).

While meatballs are cooking, steam 1 cup broccoli florets in the microwave: place in a microwave-safe bowl with 2 tbsp water, cover with a plate, and microwave for 2-3 minutes until tender-crisp.

Heat 1/4 cup marinara sauce in a small saucepan or microwave until warm.

To assemble the bowl: place the cooked brown rice at the bottom, add the broccoli on one side and meatballs on the other. Pour the warm marinara sauce over the meatballs and sprinkle with 2 tbsp grated parmesan cheese.
