1/4 cup breadcrumbs
1 large egg
1/2 tsp garlic powder
1/2 tsp onion powder

3/4 cup brown rice
1 1/2 cups water
1/3 cup marinara sauce
1/2 medium bell pepper
1/2 medium zucchini
1/4 cup shredded mozzarella cheese
1 tbsp fresh basil

In a medium pot, combine 3/4 cup brown rice with 1 1/2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed and rice is tender.

While rice cooks, in a medium bowl, combine 8 oz ground turkey, 1/4 cup breadcrumbs, 1 large egg, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp dried oregano, 1/4 tsp salt, and 1/4 tsp black pepper. Mix gently until just combined.

Form the turkey mixture into 8-10 meatballs, about 1.5 inches in diameter.

Heat 1 tbsp olive oil in a large non-stick skillet over medium heat. Add the meatballs and cook for 8-10 minutes, turning occasionally until browned on all sides and cooked through (internal temperature of 165°F).

While meatballs are cooking, dice 1/2 bell pepper and 1/2 zucchini into small pieces.

Add the diced vegetables to the skillet with the meatballs and cook for 3-4 minutes until slightly softened.

Pour 1/3 cup marinara sauce over the meatballs and vegetables, reduce heat to low, and simmer for 2-3 minutes until heated through.

Place the cooked rice in a bowl, top with the meatballs, vegetables, and sauce. Sprinkle with 1/4 cup shredded mozzarella cheese and 1 tbsp fresh basil.
