For extra flavor, you can add 1 tablespoon of grated Parmesan cheese to the meatball mixture. These meatballs can be made ahead and refrigerated for up to 3 days - perfect for meal prep!

4 oz ground turkey
1/3 cup quinoa
2/3 cup chicken broth
1 large egg white
2 tablespoons breadcrumbs
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon dried parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon olive oil

Rinse 1/3 cup of quinoa under cold water using a fine mesh strainer.

In a small pot, bring 2/3 cup of chicken broth to a boil. Add the rinsed quinoa, reduce heat to low, cover and simmer for 15 minutes until the liquid is absorbed and quinoa is tender.

While quinoa is cooking, in a medium bowl, combine 4 oz of ground turkey, 1 large egg white, 2 tablespoons of breadcrumbs, 1/4 teaspoon of onion powder, 1/4 teaspoon of garlic powder, 1/2 teaspoon of dried parsley, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.

Mix the turkey mixture gently until just combined (don't overmix or meatballs will be tough).

Form the mixture into 8 small meatballs, about 1 tablespoon each.

Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat.

Add the meatballs to the skillet and cook for about 8-10 minutes, turning occasionally until browned on all sides and cooked through to an internal temperature of 165°F.

Serve the meatballs with the cooked quinoa.
