Chef's Note
For the best results, make sure your cream cheese is properly softened before mixing. If you're packing this for lunch, wrap the whole roll tightly in plastic wrap and slice just before eating to keep it fresh. You can also substitute turkey for ham if preferred.

2 each large flour tortilla
3 tablespoons cream cheese, softened
1 teaspoon Dijon mustard
1 teaspoon honey
6 oz deli ham, thinly sliced
3 oz Swiss cheese, thinly sliced
1 cup spinach leaves
1/4 cup red bell pepper, thinly sliced
1/4 cup cucumber, thinly sliced
1/2 medium apple, thinly sliced
1/4 teaspoon salt
1/8 teaspoon black pepper

In a small bowl, mix 3 tablespoons of softened cream cheese with 1 teaspoon Dijon mustard, 1 teaspoon honey, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until smooth.

Lay the 2 flour tortillas flat on a clean work surface.

Spread half of the cream cheese mixture evenly over each tortilla, leaving about 1/2 inch border around the edges.

Layer 3 oz of ham slices over each tortilla, dividing evenly.

Place 1.5 oz of Swiss cheese slices on top of the ham on each tortilla.

Arrange 1/2 cup of spinach leaves over the cheese on each tortilla.

Distribute 1/4 cup of red bell pepper slices and 1/4 cup of cucumber slices between the two tortillas.

Add 1/4 of the apple slices to each tortilla.

Starting from one end, tightly roll up each tortilla, pressing gently as you roll to keep the filling in place.

Place the rolled tortillas seam-side down and let them sit for 2 minutes to help seal.

Using a sharp knife, cut each rolled tortilla into 1-inch pinwheels.
