For the best flavor, toast the nuts until they're just golden - they'll continue cooking slightly after removing from the oven. If you find the protein powder isn't sticking well, you can add a light spritz of cooking spray before tossing with the powder.

1/2 cup mixed nuts (almonds, walnuts, cashews)
1/4 cup whey protein powder (unflavored)
1 tablespoon honey
1 teaspoon coconut oil
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons dried cranberries

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a small bowl, mix 1 tablespoon of honey and 1 teaspoon of coconut oil. Microwave for 15 seconds until warm and easily mixable.

Add 1/2 cup of mixed nuts to a medium bowl and pour the honey mixture over them. Stir until nuts are evenly coated.

Sprinkle 1/2 teaspoon of cinnamon and 1/4 teaspoon of salt over the nuts and mix well.

Spread the coated nuts in a single layer on the prepared baking sheet.

Bake for 12-15 minutes, stirring once halfway through, until nuts are golden brown and fragrant.

Remove from oven and let cool for 5 minutes on the baking sheet.

While still warm but not hot, sprinkle 1/4 cup of whey protein powder over the nuts and toss gently to coat.

Add 2 tablespoons of dried cranberries and mix everything together.

Allow to cool completely before serving or storing in an airtight container.
