For the best flavor, try to use fresh herbs rather than dried. If you don't have fresh herbs on hand, substitute with 1 teaspoon dried parsley and 1/2 teaspoon dried dill. The cod is done when it reaches an internal temperature of 145°F and flakes easily with a fork.

1 tablespoon olive oil
1 medium lemon
2 tablespoons fresh parsley
1 tablespoon fresh dill
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 cup brown rice
2 cups broccoli florets
1/2 cup cherry tomatoes

Preheat the oven to 400°F (200°C).

Rinse 3/4 cup of brown rice and cook according to package instructions (typically 2:1 water to rice ratio, simmered for about 15-20 minutes).

While rice is cooking, pat 8 oz of cod fillet dry with paper towels and place on a baking sheet lined with parchment paper.

Drizzle 1 tablespoon of olive oil over the cod fillet.

Cut the lemon in half. Squeeze juice from half the lemon over the fish, and slice the other half into rounds for garnish.
