Chef's Note
For the best flavor, try to use fresh herbs rather than dried. If you don't have fresh herbs on hand, reduce the amount to 1 teaspoon dried parsley and 1/4 teaspoon dried dill. The parchment paper prevents sticking and makes cleanup a breeze!

8 oz cod fillet
1 tbsp olive oil
1 medium lemon
1 tbsp fresh parsley
1 tsp fresh dill
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
3/4 cup brown rice
2 cups broccoli florets
1/2 cup cherry tomatoes

Preheat oven to 400°F (200°C).

Rinse 3/4 cup of brown rice and cook according to package instructions (typically 15-20 minutes).

While rice is cooking, place the 8 oz cod fillet on a baking sheet lined with parchment paper.

Drizzle 1 tbsp of olive oil over the cod fillet.

Sprinkle 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper over the fish.

Cut half the lemon into thin slices and place on top of the fish. Squeeze the juice from the remaining half over the cod.

Sprinkle 1 tbsp chopped fresh parsley and 1 tsp fresh dill over the fish.

Bake the cod in the preheated oven for 15-18 minutes, or until it flakes easily with a fork.

While the fish is baking, steam 2 cups of broccoli florets for 5 minutes until tender-crisp.

Halve 1/2 cup of cherry tomatoes and set aside.
