Chef's Note
For meal prep, you can cook the turkey ahead of time and store it in the refrigerator. Just reheat it briefly before assembling your wrap. If you prefer a warmer wrap, you can toast it in a dry skillet for 1-2 minutes on each side after rolling it up.

Ingredients
6 oz ground turkey
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
1 tsp olive oil
2 cups fresh spinach
1 large (10-inch) whole wheat tortilla
2 tbsp low-fat Greek yogurt
1 tsp lemon juice
1/4 cup diced tomato
1/4 cup diced cucumber
1/4 cup reduced-fat shredded cheddar cheese
Instructions
- 1
Heat a non-stick skillet over medium heat and add 1 tsp of olive oil.
- 2
Add 6 oz of ground turkey to the skillet, breaking it up with a spatula as it cooks.
- 3
Season the turkey with 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp salt, and 1/4 tsp black pepper. Cook for about 8-10 minutes until fully browned and no longer pink.
- 4
While the turkey cooks, warm the whole wheat tortilla in the microwave for 10-15 seconds to make it more pliable.
- 5
In a small bowl, mix 2 tbsp Greek yogurt with 1 tsp lemon juice to create a simple sauce.
- 6
Spread the yogurt sauce over the center of the tortilla, leaving about an inch around the edges.
- 7
Layer 2 cups of fresh spinach on top of the sauce.
- 8
Once the turkey is cooked, drain any excess liquid and spread it evenly over the spinach.
- 9
Sprinkle 1/4 cup diced tomato, 1/4 cup diced cucumber, and 1/4 cup shredded cheddar cheese over the turkey.
- 10
Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a wrap.
- 11
Cut the wrap in half diagonally and serve immediately.
