  • 1 medium lemon

  • 2 tbsp fresh parsley

  • 3/4 cup brown rice

  • 2 cups broccoli florets

  • 1/2 cup cherry tomatoes

    Rinse 3/4 cup of brown rice and cook according to package instructions (typically 2:1 water to rice ratio, simmered for about 15-20 minutes).

    While the rice cooks, pat the 8 oz cod fillet dry with paper towels and place it on a baking sheet lined with parchment paper.
