Chef's Note
For the best results, make sure not to overcook the cod - it should be just opaque and flake easily. If you don't have fresh herbs, you can substitute with 1/3 the amount of dried herbs. The brown rice can be made ahead of time to reduce the overall cooking time.

8 oz cod fillet
1 tbsp olive oil
1 medium lemon
2 tbsp fresh parsley
1 tsp fresh thyme
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
3/4 cup brown rice
2 cups broccoli florets
1/2 cup cherry tomatoes

Preheat your oven to 400°F (200°C).

Rinse 3/4 cup of brown rice and cook according to package instructions (typically 2:1 water to rice ratio, simmered for about 15-20 minutes).

While the rice cooks, pat the 8 oz cod fillet dry with paper towels and place it on a baking sheet lined with parchment paper.

Drizzle 1 tbsp of olive oil over the fish and season with 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper.

Sprinkle 1 tsp fresh thyme and 1 tbsp fresh parsley over the fish.

Slice half the lemon and place the slices on and around the fish. Squeeze the juice from the remaining half over the cod.

Bake the cod in the preheated oven for 15-18 minutes, or until it flakes easily with a fork.

While the fish bakes, steam 2 cups of broccoli florets for 4-5 minutes until tender-crisp.

Halve 1/2 cup of cherry tomatoes and toss them with the remaining 1 tbsp of fresh parsley.

Serve the baked cod over the brown rice with the broccoli and tomatoes on the side.
