For the best flavor, try to use fresh herbs rather than dried. If you don't have fresh herbs on hand, use 1 teaspoon dried parsley and 1/4 teaspoon dried dill instead. The cod is done when it reaches an internal temperature of 145°F and flakes easily with a fork.

8 oz cod fillet
1 tbsp olive oil
1 small lemon
1 tbsp fresh parsley
1 tsp fresh dill
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
3/4 cup brown rice
2 cups broccoli florets
1/2 cup cherry tomatoes

Preheat your oven to 400°F (200°C).

Rinse 3/4 cup of brown rice under cold water, then cook according to package instructions (typically 2 cups water to 1 cup rice, simmer for 15-20 minutes).

While the rice cooks, place the 8 oz cod fillet on a baking sheet lined with parchment paper.

Drizzle 1 tbsp of olive oil over the cod fillet.

Squeeze juice from half the lemon over the fish, and slice the remaining half for garnish.

Sprinkle 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper over the fish.

Chop 1 tbsp fresh parsley and 1 tsp fresh dill, then sprinkle over the fish.
