This simple snack plate is perfect for a quick protein boost. For meal prep, you can pre-slice the cucumber and tomatoes and store them separately in the refrigerator. The yogurt dip can also be made ahead and will keep for up to 3 days refrigerated.

1 medium cucumber
1/2 cup cherry tomatoes
1/2 cup Greek yogurt
1 large hard-boiled egg
6 crackers whole grain crackers
2 tablespoons hummus
1 teaspoon lemon juice
1/4 teaspoon dried dill
1/8 teaspoon salt
1/8 teaspoon black pepper

Wash the cucumber and cherry tomatoes. Slice the cucumber into rounds and halve the cherry tomatoes.

Peel and slice the hard-boiled egg.

In a small bowl, mix 1/2 cup of Greek yogurt with 1 teaspoon of lemon juice, 1/4 teaspoon of dried dill, 1/8 teaspoon of salt, and 1/8 teaspoon of black pepper to make a quick dip.

Arrange the cucumber slices, cherry tomatoes, sliced egg, and 6 whole grain crackers on a plate.
