8 oz cod fillet
1 tbsp olive oil
1 small lemon
2 tbsp fresh parsley
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
3/4 cup brown rice
2 cups broccoli florets

Preheat your oven to 400°F (200°C).

Rinse 3/4 cup of brown rice under cold water, then cook according to package instructions (typically 15-20 minutes).

While the rice cooks, line a baking sheet with parchment paper or aluminum foil.

Pat the 8 oz cod fillet dry with paper towels and place it on the prepared baking sheet.

Drizzle 1 tbsp of olive oil over the cod and season with 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper.

Cut the small lemon in half. Squeeze juice from half the lemon over the fish, and slice the other half into thin rounds to place on top of the fish.

Sprinkle 1 tbsp of the chopped fresh parsley over the fish.

Bake the cod in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.

While the fish bakes, steam 2 cups of broccoli florets for 5 minutes until tender-crisp.
