For meal prep, keep the avocado, salsa, and Greek yogurt separate until ready to eat. You can also substitute ground chicken or beef for the turkey if preferred. Using pre-cooked rice can cut your prep time in half!

4 oz lean ground turkey
1 tsp taco seasoning
1/2 cup black beans
1/2 cup brown rice
1/2 medium bell pepper
1/4 cup red onion
1/4 cup corn kernels
1/4 medium avocado
1 tsp lime juice
1/4 cup reduced-fat shredded cheddar cheese
2 tbsp Greek yogurt
2 tbsp salsa
1 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper

Cook 1/2 cup brown rice according to package instructions (usually about 15 minutes for quick-cooking varieties).

While rice cooks, heat 1 tsp olive oil in a non-stick skillet over medium heat.

Add 1/4 cup diced red onion and 1/2 diced bell pepper to the skillet and sauté for 3 minutes until softened.

Add 4 oz lean ground turkey to the skillet, breaking it up with a spatula. Cook for 5 minutes until no longer pink.

Sprinkle 1 tsp taco seasoning over the turkey and stir to coat. Cook for 1 minute more.

Add 1/2 cup black beans (drained and rinsed) and 1/4 cup corn kernels to the skillet. Heat through for 2 minutes.

Season with 1/4 tsp salt and 1/4 tsp black pepper.

Dice 1/4 avocado and toss with 1 tsp lime juice.

To assemble the bowl: place the cooked rice at the bottom, top with the turkey-bean mixture, 1/4 cup reduced-fat shredded cheddar cheese, diced avocado, 2 tbsp salsa, and 2 tbsp Greek yogurt.
