Chef's Note

3 tbsp panko breadcrumbs

1 cup broccoli florets

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Start cooking 1 cup of brown rice according to package instructions (typically 1 cup rice to 2 cups water, simmered for 20-25 minutes).

In a shallow bowl, beat 1 large egg with a fork.

In another shallow bowl, mix 3 tbsp panko breadcrumbs, 3 tbsp grated Parmesan cheese, 1 tsp garlic powder, 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper.

Pat the 8 oz chicken breast dry with paper towels and dip it first in the beaten egg, then coat thoroughly in the breadcrumb mixture, pressing gently to adhere.

Place the coated chicken on the prepared baking sheet and drizzle with 1 tbsp olive oil.

Bake for 20-25 minutes until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
