1 tsp taco seasoning
1/2 cup black beans
1/2 cup brown rice
1/2 medium bell pepper
1/4 cup red onion
1/4 cup corn kernels
1/4 cup cherry tomatoes
1/4 medium avocado
1 tsp lime juice
2 tbsp reduced-fat Greek yogurt
1 tbsp cilantro
1 tsp olive oil
1/4 tsp salt

Cook 1/2 cup brown rice according to package instructions. This typically takes about 15 minutes for quick-cooking brown rice.

While rice cooks, dice 1/2 bell pepper and 1/4 cup red onion.

Heat 1 tsp olive oil in a non-stick pan over medium heat. Add the ground turkey and cook for 5-6 minutes until browned, breaking it up with a spatula.

Add 1 tsp taco seasoning to the turkey and stir to coat. Cook for 1 minute more.

Rinse and drain 1/2 cup black beans, then add to the pan with the turkey. Stir and heat through for 2 minutes.

Slice 1/4 avocado and halve 1/4 cup cherry tomatoes.

Mix 2 tbsp Greek yogurt with 1 tsp lime juice to create a simple crema.
