1 tsp Italian seasoning

1/4 cup grated parmesan cheese
1/4 cup panko breadcrumbs
3/4 cup brown rice
2 cups broccoli florets
1/2 medium lemon

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

Cook 3/4 cup of brown rice according to package instructions (typically 1 part rice to 2 parts water, simmered for about 20 minutes).

In a shallow bowl, mix 1/4 cup grated parmesan cheese and 1/4 cup panko breadcrumbs.

Pat the 8 oz chicken breast dry with paper towels. If thick, slice horizontally to create even thickness.

Brush chicken with 1 tbsp olive oil, then season both sides with 1 tsp garlic powder, 1 tsp Italian seasoning, 1/4 tsp salt, and 1/4 tsp black pepper.

Press the seasoned chicken into the parmesan-breadcrumb mixture, coating both sides evenly.

Place the coated chicken on the prepared baking sheet and bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (74°C).
