Chef's Note
For meal prep, you can cook the turkey mixture ahead of time and store it in the refrigerator for up to 3 days. Just reheat and assemble with fresh lettuce when ready to eat. If you prefer less spice, reduce or omit the sriracha and add a tablespoon of hoisin sauce for sweetness instead.

8 oz ground turkey
2 cloves, minced garlic
1 tsp, grated ginger
2 stalks, chopped green onions
1/2 medium, diced red bell pepper
2 tbsp low-sodium soy sauce
1 tsp sriracha sauce
1 tsp honey
1 tsp rice vinegar
1 tsp olive oil
6 large leaves butter lettuce leaves
1/2 cup, cooked brown rice
1/2 for serving lime
Instructions

Cook 1/2 cup brown rice according to package instructions. This can be done ahead of time.

Heat 1 tsp olive oil in a non-stick skillet over medium-high heat.

Add 2 minced garlic cloves and 1 tsp grated ginger to the pan and sauté for 30 seconds until fragrant.

Add 8 oz ground turkey to the pan and break it up with a wooden spoon. Cook for about 5-6 minutes until no longer pink.

Add 1/2 diced red bell pepper and cook for another 2 minutes until slightly softened.

In a small bowl, mix 2 tbsp low-sodium soy sauce, 1 tsp sriracha, 1 tsp honey, and 1 tsp rice vinegar.

Pour the sauce over the turkey mixture and stir to combine. Cook for another 2 minutes until the sauce thickens slightly.

Stir in the chopped green onions, reserving some for garnish.

Wash and dry 6 butter lettuce leaves.

To serve, place cooked brown rice in the center of each lettuce leaf, top with the turkey mixture, and garnish with remaining green onions.
