Chef's Note
For extra crunch, make sure the almonds are completely cooled before storing. If you find the almonds sticking together, you can break them apart gently with your hands. These will keep in an airtight container for up to two weeks!

1 cup raw almonds
2 tablespoons honey
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons whey protein powder (vanilla)

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a medium bowl, mix 2 tablespoons of honey, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt until well combined.

Add 1 cup of raw almonds to the honey mixture and stir until the almonds are evenly coated.

Sprinkle 1 teaspoon of ground cinnamon over the almonds and mix thoroughly.

Spread the coated almonds in a single layer on the prepared baking sheet.

Bake for 15 minutes, stirring once halfway through to ensure even roasting.

Remove from the oven and let cool for 5 minutes.

While still warm but not hot, sprinkle 2 tablespoons of vanilla whey protein powder over the almonds and toss to coat evenly.
