Chef's Note
For the crunchiest almonds, make sure they're completely cooled before storing. If you prefer a stronger cinnamon flavor, you can add an extra 1/2 teaspoon. Store in an airtight container for up to two weeks.

1 cup raw almonds
2 tablespoons honey
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons whey protein powder (vanilla)

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a medium bowl, mix 2 tablespoons of honey, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt until well combined.

Add 1 cup of raw almonds to the honey mixture and stir until the almonds are evenly coated.

Sprinkle 1 teaspoon of ground cinnamon over the coated almonds and toss to distribute evenly.

Spread the almonds in a single layer on the prepared baking sheet.

Bake for 15 minutes, stirring once halfway through to ensure even roasting.

Remove from oven and let cool for 5 minutes.

While still warm, sprinkle 2 tablespoons of vanilla whey protein powder over the almonds and toss gently to coat.
