This recipe replaces protein powder with protein-rich cottage cheese that's blended until smooth. The cottage cheese adds creaminess and protein without the processed ingredients. For best results, use a good quality cottage cheese with small curds. You can prepare all components the night before and assemble in the morning. Keep the granola separate until serving to maintain its crunch. For a dairy-free version, substitute coconut yogurt for the Greek yogurt and silken tofu for the cottage cheese.

2 cups cottage cheese

2 cups fresh strawberries, sliced
1 cup fresh blueberries
1 cup fresh raspberries
1 cup unsweetened coconut flakes
2 cups gluten-free granola
4 tablespoons chia seeds
4 tablespoons almond butter
2 teaspoons lemon zest
2 teaspoons vanilla extract
2 tablespoons maple syrup
1 teaspoon cinnamon

Toast 1 cup of unsweetened coconut flakes in a dry skillet over medium heat for about 3-5 minutes until lightly golden, stirring frequently to prevent burning. Set aside to cool.

In a food processor or blender, pulse 2 cups of cottage cheese until smooth, about 30 seconds. Transfer to a large bowl.

Add 2 cups of Greek yogurt to the cottage cheese along with 2 teaspoons of vanilla extract, 2 teaspoons of lemon zest, and 1 teaspoon of cinnamon. Mix until smooth and well incorporated.

In a small saucepan, warm 4 tablespoons of almond butter and 2 tablespoons of maple syrup over low heat for about 2 minutes until it becomes more fluid and easier to drizzle.

In a separate bowl, mix 2 cups of fresh strawberries, 1 cup of blueberries, and 1 cup of raspberries with 2 tablespoons of honey. Gently toss to coat the berries.

In another bowl, combine 2 cups of gluten-free granola with 4 tablespoons of chia seeds and the remaining 2 tablespoons of honey. Mix well.

To assemble each parfait: Start with a layer of the yogurt-cottage cheese mixture at the bottom of each serving glass (about 1/2 cup per glass).
