Chef's Note
For a time-saving tip, make a larger batch of the granola on the weekend and store it in an airtight container for up to two weeks. This allows for quick assembly of parfaits on busy mornings. For the creamiest parfait, use full-fat Greek yogurt, but 2% or non-fat can be substituted to reduce calories if desired.

1/4 cup chopped walnuts
1/4 cup unsweetened coconut flakes
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

3 tablespoons coconut oil
1/4 cup maple syrup
1 teaspoon vanilla extract
4 cups Greek yogurt
1/4 cup honey
2 cups fresh berries (strawberries, blueberries, raspberries)
2 medium sliced banana
8 leaves fresh mint leaves

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a large bowl, combine 2 cups of rolled oats, 1/2 cup of sliced almonds, 1/4 cup of chopped walnuts, and 1/4 cup of unsweetened coconut flakes.

Add 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of salt to the oat mixture and stir to combine.

In a small saucepan over low heat, melt 3 tablespoons of coconut oil. Add 1/4 cup of maple syrup and 1 teaspoon of vanilla extract, stirring to combine.

Pour the liquid mixture over the oat mixture and stir until everything is evenly coated.

Spread the granola mixture evenly on the prepared baking sheet.

Bake for 15 minutes, stirring once halfway through, until the granola is golden brown and fragrant. Allow to cool completely (it will crisp up as it cools).

While the granola cools, wash and prepare 2 cups of fresh berries, removing stems and slicing larger berries if needed.

Peel and slice 2 medium bananas.

In a small bowl, whisk 1/4 cup of honey until it's easily pourable.

To assemble each parfait: In a clear glass, layer 1/4 cup of Greek yogurt, followed by 2 tablespoons of the homemade granola, and a few pieces of fresh fruit.

Repeat the layers once more, finishing with a drizzle of honey (about 1 tablespoon per parfait).

Garnish each parfait with 2 fresh mint leaves and serve immediately.
