Chef's Note
For a fun variation, try using different nut butters like almond or cashew. To keep the apples from browning if preparing in advance, the lemon juice solution works wonders. You can also customize the toppings based on preference - try coconut flakes or chopped nuts for added texture!

Ingredients
4 whole large red apples
1 cup natural peanut butter
2 tablespoons honey
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt
1 cup granola
1/4 cup mini chocolate chips
1/4 cup dried cranberries
1 tablespoon lemon juice
2 tablespoons water
Instructions
- 1
In a small bowl, mix 1 tablespoon of lemon juice with 2 tablespoons of water. Set aside.
- 2
Wash and core the 4 apples. Slice each apple into 8 even wedges.
- 3
Brush the apple slices with the lemon juice mixture to prevent browning.
- 4
In a medium bowl, combine 1 cup of natural peanut butter, 2 tablespoons of honey, 1 teaspoon of cinnamon, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of sea salt. Mix until smooth and well combined.
- 5
If the peanut butter mixture is too thick, warm it in the microwave for 15-20 seconds to make it more spreadable.
- 6
In a separate bowl, mix 1 cup of granola with 1/4 cup of mini chocolate chips and 1/4 cup of dried cranberries.
- 7
Arrange the apple slices on a serving platter or individual plates.
- 8
Spread approximately 1 tablespoon of the peanut butter mixture onto each apple slice.
- 9
Sprinkle the granola mixture over the peanut butter-topped apple slices.
- 10
Serve immediately or refrigerate for up to 1 hour before serving.
