Chef's Note
For the best flavor, use day-old bread as it absorbs the custard mixture better without becoming soggy. If you only have fresh bread, toast it lightly before soaking to help it hold its shape during cooking.

8 slices thick-cut bread
6 large eggs
1 cup milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
3 medium ripe bananas
1/2 cup walnuts
2 tablespoons butter
1/2 cup maple syrup
1 cup Greek yogurt
2 tablespoons honey

In a large shallow bowl, whisk together 6 large eggs, 1 cup milk, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and 1/4 teaspoon nutmeg until well combined.

Slice 2 of the bananas into 1/2-inch thick rounds. Mash the remaining banana in a small bowl with a fork until smooth.

Roughly chop 1/2 cup walnuts and set aside.

Stir the mashed banana into the egg mixture until incorporated.

Heat a large non-stick skillet or griddle over medium heat. Add 1/2 tablespoon of butter and let it melt.

Dip a slice of bread into the egg mixture, allowing it to soak for about 30 seconds on each side.

Place the soaked bread onto the heated skillet and cook for 2-3 minutes per side until golden brown. Repeat with remaining slices, adding more butter as needed.

While cooking the French toast, mix 1 cup Greek yogurt with 2 tablespoons honey in a small bowl.

To serve, place 2 slices of French toast on each plate. Top with banana slices, sprinkle with chopped walnuts, drizzle with maple syrup, and add a dollop of the honey-yogurt mixture.
