Chef's Note
For the best flavor, try using seasonal berries when available. You can also prepare the compote a day ahead and store it in the refrigerator to save time. If you prefer a smoother compote, mash some of the berries with a fork while cooking. For extra protein, consider adding a scoop of unflavored protein powder to the yogurt.

4 cups plain Greek yogurt (2% fat)
4 cups mixed berries (strawberries, blueberries, raspberries)
3 tablespoons honey
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 cup granola
1/2 cup chopped walnuts
2 tablespoons chia seeds

Rinse 4 cups of mixed berries and hull/slice any larger berries like strawberries.

In a medium saucepan, combine the berries, 2 tablespoons of honey, 1 tablespoon of lemon juice, and 1 teaspoon of lemon zest.

Bring the mixture to a simmer over medium heat and cook for about 10 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.

Remove from heat and stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of cinnamon. Allow the compote to cool for 5 minutes.

While the compote cools, divide 4 cups of Greek yogurt evenly among four serving bowls.

In a small bowl, mix 1 cup of granola with 1/2 cup of chopped walnuts and 2 tablespoons of chia seeds.

Drizzle the remaining 1 tablespoon of honey over the yogurt.
