1 tablespoon raw honey
1/2 cup fresh strawberries, hulled and sliced
1/4 cup fresh blueberries
1/4 cup fresh blackberries
1/3 cup homemade granola (or store-bought)
1 tablespoon sliced almonds, lightly toasted
1 teaspoon chia seeds
1/4 teaspoon vanilla extract
1/4 teaspoon lemon zest
2-3 leaves fresh mint leaves (for garnish)

In a small bowl, mix 1 cup of Greek yogurt with 1/4 teaspoon vanilla extract and 1/4 teaspoon lemon zest until well combined.

In a clear glass or jar, begin layering your parfait by adding 1/3 of the yogurt mixture to the bottom.
