Chef's Note
For easier peeling, use eggs that are at least a week old. Fresh eggs tend to be more difficult to peel. You can also add a teaspoon of baking soda to the cooking water to help make peeling easier.

3 large eggs
2 slices whole grain bread
1/4 cup Greek yogurt
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon paprika
Instructions

Place 3 large eggs in a medium saucepan and cover with cold water by 1 inch.

Bring water to a boil over medium-high heat.

Once boiling, remove the pan from heat, cover, and let sit for 10 minutes.

While eggs are cooking, toast 2 slices of whole grain bread.

Prepare a bowl of ice water.

After 10 minutes, transfer eggs to the ice water bath and let cool for 5 minutes.

Peel the eggs and slice them in half.

Serve eggs with toast and 1/4 cup of Greek yogurt on the side.
