8 oz lean ground beef (93/7)
1 tbsp taco seasoning
2 tbsp water
3 medium corn tortillas
1/2 cup black beans
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup reduced-fat shredded cheddar cheese
2 tbsp plain Greek yogurt
1/2 medium lime
1 spray cooking spray

Heat a non-stick skillet over medium heat and spray with cooking spray.

Add 8 oz of lean ground beef to the skillet and break it apart with a wooden spoon. Cook for 5-7 minutes until browned.

Drain any excess fat from the pan if necessary.

Sprinkle 1 tbsp of taco seasoning over the cooked beef and add 2 tbsp of water. Stir to combine and simmer for 2 minutes until the liquid is mostly absorbed.

While the beef is cooking, rinse and drain 1/2 cup of black beans and warm them in the microwave for 30 seconds.

Warm the 3 corn tortillas either in the microwave (wrapped in damp paper towels for 30 seconds) or in a dry skillet for 30 seconds per side.

Assemble the tacos by dividing the seasoned beef among the tortillas.

Top each taco with black beans, shredded lettuce, diced tomatoes, and reduced-fat shredded cheddar cheese.

Serve with 2 tbsp of plain Greek yogurt as a sour cream substitute and squeeze fresh lime juice over the tacos.
