For the best flavor, try to use fresh herbs instead of dried if you have them on hand. You can substitute with 1 tablespoon fresh parsley and 1/2 tablespoon fresh dill. The lemon slices not only add flavor but also help keep the fish moist during baking.

1 medium lemon
2 tsp olive oil
1/2 tsp garlic powder
1 tsp dried parsley
1/2 tsp dried dill
1/4 tsp salt

1 cup brown rice
2 cups broccoli florets

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.

Start cooking 1 cup of brown rice according to package instructions (typically 2 cups water to 1 cup rice, simmered for about 15 minutes).

Pat the 8 oz tilapia fillet dry with paper towels and place it on the prepared baking sheet.

In a small bowl, mix 2 tsp olive oil, juice from half the lemon (about 1 tablespoon), 1/2 tsp garlic powder, 1 tsp dried parsley, 1/2 tsp dried dill, 1/4 tsp salt, and 1/4 tsp black pepper.

Brush the herb mixture evenly over both sides of the tilapia fillet.
