1 medium lemon

1 cup brown rice
2 cups broccoli florets

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.

Rinse 1 cup of brown rice and cook according to package instructions (typically 2 cups water to 1 cup rice, simmered for about 15 minutes).

While rice cooks, mince 2 cloves of garlic and chop 2 tbsp of fresh parsley.

Zest half the lemon, then slice the remaining lemon into thin rounds.

Pat the 8 oz tilapia fillet dry with paper towels and place on the prepared baking sheet.
